Before you buy anything

A few things worth knowing first

Temperature control is non-negotiable. Sake ferments cold (35-50°F for the main phase), and your house will not stay that cold on its own. A temperature controller ($35-45) paired with an old mini fridge is the single investment that determines whether your batch succeeds or fails. Budget for this before anything else.

Use sake yeast, not wine yeast or bread yeast. This is the mistake most beginners make when they find a home sake recipe online. Sake yeast (Wyeast 4134, White Labs WLP705) handles cold fermentation temperatures and produces the clean, dry profile sake is known for. Lalvin EC-1118 and bread yeast produce something drinkable but not sake.

Your first batch is a learning batch, and that's a good thing. Commercial sake takes months and highly refined technique. Your first effort will probably be a sweet, low-alcohol doburoku-style brew. That style is genuinely delicious on its own terms. Adjust your expectations, document everything, and use batch one to understand the process rather than to impress anyone.

Koji

Rice & Steaming

Fermentation

Your first batch of home sake

Home sake is one of the most rewarding things you can ferment. The koji step is unlike anything else in hobbyist brewing, and your first finished batch will taste like nothing you've bought. Here's how to get through batch one without losing it.

Home sake has a reputation for being unapproachably complicated, and the reputation isn’t entirely wrong. There’s a longer learning curve here than beer or wine. But it’s learnable. Thousands of people do it at home, the process is documented well in English, and the fundamentals fit in a weekend’s study before your first brew day.

What follows is a walkthrough of batch one: what you’re doing, in what order, and why. Not every esoteric detail, just enough to finish a batch and understand what happened.

Before brew day: the stuff that matters

The single most important setup decision is temperature control. Sake ferments cold (35-50°F for the main fermentation phase), and your house will not stay that cold on its own. Sort out your fermentation fridge and temperature controller before you buy anything else. A failed batch from uncontrolled temperature is far more expensive than the Inkbird ITC-308 it would have taken to prevent it.

Order your ingredients at least a week before brew day. Sake yeast (Wyeast 4134 or White Labs WLP705) is not typically on grocery store shelves. Koji starter spores (Aspergillus oryzae) are available on Amazon and from homebrew suppliers. If you’re using pre-made kome-koji instead, Japanese grocery stores and Amazon both carry it, but availability varies.

Sanitize everything that will touch the sake. Use StarSan no-rinse sanitizer diluted to 1 oz per 5 gallons. Foam every surface, let it drain, and don’t rinse. “Don’t fear the foam” is homebrew wisdom you’ll encounter constantly, and it’s correct.

Read your recipe end-to-end before starting. The sandan shikomi adds rice and koji in three stages over 4 days, and the timing of those additions matters. Surprises mid-batch are expensive.

Koji: the step that defines everything

Koji is the mold (Aspergillus oryzae) that converts the rice starches to fermentable sugar. Without active koji enzymes, you cannot make sake. This is not a step you can shortcut with regular sugar or improvise around.

If you’re making your own koji (recommended once you understand the process):

Steam your rice and cool it to 86°F. Inoculate it with koji-kin spores, mix well, and transfer to your incubation box. The incubation box is any insulated container (a Cambro tub works) with a damp cloth inside to maintain 90-95% humidity and a probe thermometer to monitor temperature. The koji should reach 86-90°F during peak growth, which generates its own heat. Check every 8-12 hours.

At 24 hours: look for faint white fuzz beginning to grow on the rice. It should smell sweet and mushroomy. If it smells bad, something went wrong. At 40-45 hours: the rice should be covered in white mycelium, feel slightly warm to the touch, and smell strongly of chestnuts. That’s done.

If you’re using pre-made kome-koji: thaw it to room temperature and use it directly in the sandan shikomi. You skip the cultivation step entirely.

The most common failure point is humidity. Too low, and the koji won’t grow. Too high, and green or black competitor molds appear. A tight-lidded container with a damp (not dripping) cloth gives you the right range.

The sandan shikomi: building the mash in three stages

Commercial sake is made with three additions of rice, water, and koji (plus yeast) over four days. This staged approach prevents the yeast from being overwhelmed by too much sugar all at once and gives you better fermentation control than dumping everything in at once.

Day 1 (Hatsuzoe): Steam and cool your rice. Combine with koji and water, add your yeast starter. Transfer to your fermentation vessel. Seal with an airlock. Keep at 55-60°F.

Day 2 (Nakazoe): Steam, cool, and add a second, larger portion of rice and koji. No yeast added here. The yeast from Day 1 now has more food to work with.

Day 4 (Tomezoe): Steam, cool, and add the final and largest portion. The mash is now at full volume. Move to your cold fermentation temperature (38-45°F).

Your airlocks should be bubbling actively by Day 3. If they’re not, check temperature (cold inhibits yeast activity) and confirm your yeast was pitched when active. Cold-fermented sake can take longer than beer to show visible activity. Give it time.

Cold fermentation: the waiting game

Main fermentation runs 3-4 weeks at 38-50°F. You’ll see the most visible airlock activity in the first week. By week two it slows. By week three it stops. When the airlock goes quiet and stays quiet for 2-3 days, check your hydrometer.

Sake ferments to a very low final gravity (often 0.990 to 1.000 or below), lower than wine. This happens because the koji enzymes keep producing fermentable sugar throughout fermentation, even while the yeast consumes it. The hydrometer lets you confirm fermentation is genuinely complete rather than just temporarily stalled.

Taste a sample every few days in week three. You’ll notice it getting drier and more complex. When it tastes “done” to your palate AND the hydrometer is stable over two consecutive readings, it’s time to press.

Resist the urge to warm it up to speed things. The cold fermentation is doing real work on the flavor. Rushed sake fermented at room temperature is noticeably worse.

Pressing and what comes after

Transfer your fermented mash into a fine-mesh straining bag hung over a clean sanitized carboy. Let it drip under gravity for 24 hours. Do not squeeze. After the gravity press drains completely, you can do one gentle squeeze for a second press that yields 10-15% more liquid.

What’s left in the bag is kasu (sake lees). It’s a cooking ingredient worth keeping: use it in marinades, fish preparations, or as a brining medium. It keeps in the freezer.

The pressed sake is cloudy (nigori). It’s drinkable right now and many people enjoy it at this stage. To clarify it, cold-crash the vessel (drop to 32-34°F) for 3-5 days and the solids will settle. Rack off the clear portion.

What your first batch will actually taste like

Be honest with yourself: batch one will probably not taste like the ginjo at your local sushi bar. It will be sweeter, cloudier, and lower-alcohol. That style has a name (doburoku) and it’s genuinely good on its own terms: earthy, funky, slightly effervescent if it’s still active, with a richness that commercial sake doesn’t have.

That’s not failure. That’s what unrefined rice fermentation tastes like. Commercial sake achieves its clarity and dryness through highly polished rice, extended cold maturation, multiple filtration passes, and pasteurization. You did one batch at home on your first attempt.

The brewers who make the most satisfying home sake are the ones who document batch one carefully and know exactly what to adjust for batch two. Write down your temperatures, your timing, your koji quality, your water. The notes from batch one are the recipe for batch three.

Beginners get pressured to buy a lot of stuff that doesn't help them play better. Here's what we'd skip on day one.

  • A traditional sake press (fune) — Wooden sake presses cost hundreds of dollars and are built for commercial volumes. A fine mesh bag and gravity pressing produces excellent results at home.
  • Rice milling equipment — Sake rice polishing (seimaibuai) is done commercially and specified on the bag. You'll never mill sake rice at home, and you don't need to.
  • Pasteurization equipment — Traditional sake is pasteurized twice (hi-ire). Home batches stored cold and consumed within a month rarely need it. Handle it with refrigeration first.
  • Multiple yeast strains to compare — Master one strain across three or four batches before experimenting. The process variables are already high enough without adding yeast comparison on top.
  • Activated charcoal fining agents — These remove color and off-flavors from commercial sake. Your first batch is cloudy and that's correct. Clarity comes from technique improvements, not additives.

Is brewing sake at home legal in the US?

Yes. Home fermentation of beer and wine is federally legal (up to 100 gallons per person, 200 per household per year). Sake qualifies as a rice wine under the home winemaking exemption. Distillation is a separate legal matter, but sake is not distilled. Check local regulations if outside the US.

How long does a batch of home sake take?
